Mocha Quinoa Brownies

This is the result of another one of my crazy experiments:  Brownies made with cooked quinoa instead of flour!  Fudgy, chewy goodness….mmmmmm.

Mocha Quinoa Brownies   (vegan and gluten-free)

Brownie Ingredients:

  • 1 cup cooked quinoa
  • 1 cup pitted dates
  • 1/4 cup cocoa powder or carob powder
  • 2 tablespoons coconut butter (melted)
  • 1 teaspoon vanilla extract
  • 1 teaspoon coffee extract
  • sea salt as desired

Frosting Ingredients:

  • 2 tablespoons maple syrup
  • 1 tablespoon coconut butter (melted)
  • 1 tablespoon cocoa or carob powder
  • 1 teaspoon coffee extract
  • sea salt as desired

Directions:

Preheat your oven to 350.  Blend up all brownie ingredients in a food processor or blender until incorporated and smooth.  Using a spatula, spread into a small baking dish (I used a 6″X6″).  Mixture will be very sticky.  Bake for 20 minutes.

While brownies are baking whisk together the frosting ingredients in a small bowl.  It will be ready to spread on the brownies shortly after they come out of the oven.  Store in the fridge or freezer.

      Me too- I’d have to say quinoa is my favorite “grain” and I do love the fact that it’s a great source of protein.
